Often times I get paralyzed by my own fear, fear of success, fear of losing the comfort and fear of risks. I start a project and have it all layered out but when it comes to execution, I'm suddenly thrown into self-sabotage, the "what ifs". What if no one supports me. What if I fail. I cannot seem to remember when exactly did the approval of others started to matter to me. When did I all of a sudden get shy and embarrassed. Why did I stop being a child?. Now that I think of it, I do remember.  It's a family gathering and my mother just went out to an event with a friend, she probably thought because there's family everywhere then her babies are safe, loved. It's true, we were loved and protected.  But for an energetic child like myself, something was shifting. Spinach, Potatoes, and a Little Bit of Butter — That's It! A simple add-on for spinach that actually helps some of my picky eaters to enjoy it is Potatoes. At home, we have a new rule about serving dinner with at least one vegetable on the plate, and I am trying to make everyone enjoy said vegetable. And I believe this particular recipe has been used in our homes for years. My mother used to add onions to this recipe, and I can't wait to try it next time, of course, without overwhelming my picky eaters. All you need is a bunch of spinach and a few potatoes, salt, and butter. If we didn't have a lactose-intolerant boy, I would have added cheese to make it creamier. Intructions 1. Chop the washed spinach and the potatoes to your preference, thicker if you want to boil together with the potatoes, or thinner if you want to boil potatoes separately. 2.
