Simple Spinach and Potatoes Recipe
Spinach, Potatoes, and a Little Bit of Butter — That's It!
And I believe this particular recipe has been used in our homes for years. My mother used to add onions to this recipe, and I can't wait to try it next time, of course, without overwhelming my picky eaters.
All you need is a bunch of spinach and a few potatoes, salt, and butter. If we didn't have a lactose-intolerant boy, I would have added cheese to make it creamier.
Intructions
1. Chop the washed spinach and the potatoes to your preference, thicker if you want to boil together with the potatoes, or thinner if you want to boil potatoes separately.
2. Add water and salt, then bring to a boil for 20 minutes or until the potatoes are soft. Remember, it's not good to overcook your veggies.
3. Strain water if it has not already simmered, at butter, and mash the potatoes in the same pot with the spinach.
4. serve as side or sandwich filling.(this is what I did with the left-overs)
And there you have it, it's simple and easy to cook, also it makes a good sandwich filling.
